Filippa Pastore Died Jan 1 1868 age 80 yes Father Antonino mother Antonia Maniscalco widow of Giuseppe Mineo thats about all I can figure out

Yes, it says that she was born and living in San Giuseppe. It doesn't mention where her parents nor her husband were born. If you have access to earlier records you could look for her marriage record and even better the marriage allegati which will give you further information. The record is dated 2 January but she died "ieri" (yesterday) so died 1 January.

Very well done.

Yes, you are right. There are however records that have been microfilmed for this town starting from 1820. However, they are not yet online. You would have to rent them. Here is the link to what is available to rent for San Giuseppe Jato:

Records available for rent from Family Search:

I'd be inclined to exhaust what you currently have available to you online first though. You may be able to glean information from other records you come across, especially allegati. I'd also keep a watch on Family Search Website and the Antenati Website because new records are being put online all the time.
