You are right, the words are "campagnuolo" and "campagnuola". The use of an "u" before the "o" is common at that time, and typical of South, particularly Campania. For instance, you may find "spagnuolo" for "spagnolo", "pignuolo" for "pignolo" or "ferraiuolo" for "ferraiolo".

I have found 4 or 5 other children born to Nicola Dell'Anno but they have a different mother

They are three different persons married to three different women
The Nicola in the document dated 1811 was 24yo married to Anna Schettino
The Nicola in the document dated 1814 was 33yo married to Carmina Graziano
The Nicola in the document dated 1815 was 30yo married to Nunzia Schettino

I think the Nicola's in the first and third document MIGHT be the same person.
You will often find slight differences in ages and even first names.
You should look for other documents about this family/thes families to be sure.
For instance, death records of the Schettino's.
