Looking for my grand-grandma Caterina Migole birth/baptism certificate

Over 25 million Italians have emigrated between 1861 and 1960 with a migration boom between 1871 and 1915 when over 13,5 million emigrants left the country for European and overseas destinations.

I have read the documents you posted, and I think the catch is probably about the birth itself, both for the year and for anything else. Let me explain: Caterina was 36 years old in 1904, the year of her death. So it is assumed that she was born around 1868. Perhaps 1867 considering the custom of counting the extra year from her birthday. The parents married in 1871. There is no mention in the marriage record that they recognized a daughter born out of wedlock. I mean: Catherine was born BEFORE her parents got married. Had they legitimately recognized her? If so, then her birth had to be found. But what if the child was registered as a foundling? She would have had a different and fictitious surname but the same first name, and on her birth record there should be a note in which she was legitimized by her biological parents at a date after her birth.
So if she can't be found maybe you looked by normal way, but things don't always go normally. what is certain is that she was from Nicotera. She could also have married in a neighboring country, or it could also be that the civil records are not complete, this is not uncommon, on the contrary, sometimes pages are missing, or are mixed with others, in short, anything can happen, but I must say that these of Nicotera seem to me quite in order. Then search in different years of birth and if it is not found, search for or under the surname Zanghi if it was initially legitimized only by the mother or under other surnames if registered as a foundling and then legitimized, OR search in subsequent years because sometimes the declaration of birth it took place late and could only be done on the order of the Judge.
Other option: Caterina was the daughter of first husband of Annamaria Zanghi, and then Saverio adopted legally so her surname changed..

hoping helpful haha
