Mler, what tax are you referring to? Residents who do not work in Italy do not pay Italian taxes, except for property tax (if you own), the yearly TV tax (110 Euros) and the IVA tax on certain items. Depending on your lifestyle, your tax liability is less than it is in the USA.

Mary, your children cannot obtain citizenship through you because you were not Italian when they were born. But any children you have after you reobtain your citizenship would be entitled.

Mary, to obtain your visa, you would need two recent pictures. It's good to have your flight booked in advance so you can show your ticket but a timeframe for travel should suffice. Yes, you should list the name and address of your relative in Italy who you will be staying with; the consulate will confirm it. You don't need a statement from them. You will also need proof of income (paycheck stub, etc.) and three months of past bank statements. And your Canadian passport. The passport must be valid for at least two more years.
