I agree that there are discrepancies between the civil record and the Baptism extract. Here the father is Onofrio Parisi, as you say.

I am reading “Maestro Onofrio Parisi, the son of the deceased Maestro Carmelo ...”
This record, is what is known in some towns as “Atto di Contentamento” (Act of Contentment or in my words “notarised document of approval/permission given by the parents for the marriage to take place, often used when a child is still a minor” as was so in this case. Anna was only 15. Anna’s father has signed the document “Onofrio” Parisi – so was literate by 1837.

Indeed it does. The info would've been verified by the presentation of Anna's Baptism Record.

My thinking is that the Civil Birth Record is in error. It’s interesting that it was never picked up? (But then again the Baptism Extract is a hand written copy of the original, and often errors are made in those extracts?) To be sure, look for other birth and marriage records pertaining to Onofrio Parisi and Giuseppa Zuccarello, and also their death records. (The other thing that may have happened was that instead of Onofrio reporting Anna’s birth, his father Carmelo did on his behalf, except it does quote Giuseppa Zuccarello as being the declarant’s wife. An error? The declarant (Carmelo/Onofrio) was aged 45, Giuseppa was 25 in 1822. Baptism and Birth Registration both occurred on Anna’s birthdate 19 December 1822.) I'll keep my thinking cap on.

Great find!!! Yes, I think we can safely agree with "Onofrio". Here is the translation. Onofrio's occupation has changed and I'm not sure exactly what it is. It may have something to do with "reeds"? I shall keep searching.

Maestro Onofiro Parisi died today, 10 April 1855, 5 pm, in the place he lived, was the husband of Giuseppa Zuccarello. He was 70 yo, born in Marineo, a Stazzonaro, living in Marineo, the son of the deceased Maestro Carmelo (Parisi), also a Stazzonaro, and of the deceased Maria Salerno, who had both lived in Marineo.

Here's additional info I found concerning the occupations in your records. Notice that the spellings of the occupations are in Sicilian dialect. Even though my husband and I both have Sicilian ancestry (he on his father's side and me on my mother's), I don't know the dialect. I just chanced upon the info below, in case you're interested in having a more detailed understanding of these occupations:
Stazzunaru: made clay pots and produced all sorts of bricks such as madduni (bricks), canals (Sicilian tiles) and squares (piastrelle) and other objects of common use such as tiani (tiles), rasti (vases), quartari, bummuli and ficuni, of which the raw material was clay, dried in the sun, and then cooked in a furnace.
Sapunaru: he produced soap with a mixture consisting of sludge, olive oil residues (muria), and white ash (potassium) to make the alkaline hydrolysis of fatty acids take place. The mixture was brought to a boil for several hours and, after being cooled, a white paste was obtained which was mixed well and collected in a terracotta container to be dried, where it was left to rest for three days, and finally sold.
Canalaru: in addition to tiles (canals) and bricks, he also made jugs of various shapes and sizes, mugs, snow flasks, and other objects such as piggy banks, and finally vases of all sizes and edges (large cylindrical containers). The raw material was clay, which was of two types: one dark (“crita nira” or black clay), and one light (“crita janca” or white clay). To make the tiles, sand or straw was mixed with the clay, which gave more consistency to the compound. The clay, taken from the river banks, was placed in wooden crates and then was transported, on a donkey's back, to the place of processing. There it was piled up and then hung out to dry.
